Veal Sausage on Swiss Chard Stems

Ingredients
4 veal sausages
1 shallot
600 g Swiss chard stems
30 g pine nuts
6 tbsp sunflower or rapeseed oil
40 g raisins
2–3 tsp coarse-grain mustard
Salt and freshly ground pepper
Preparation
Peel and finely dice the shallot. Clean the chard stems and cut into bite-sized pieces. Toast the pine nuts in a dry pan until golden, remove and set aside.
Heat 3 tbsp oil and sauté the shallot until translucent. Add the chard and raisins and season lightly with salt. Cover and cook over gentle heat for 12–15 minutes, stirring occasionally. Season with mustard and pepper and keep warm.
Slice the veal sausages and fry in the remaining oil for 3–4 minutes until browned on all sides. Add to the vegetables, sprinkle with pine nuts and serve immediately.
Wood-fired bread is an excellent accompaniment.
