Zurich-Style Sliced Veal with Mushrooms

Ingredients
1 onion
200 g white button mushrooms
2 tbsp peanut oil
2 tbsp frying fat
1 tbsp flour
1.5 dl white wine
2 dl veal stock
2 dl cream substitute
Parsley to garnish
500 g sliced veal
Salt and pepper
Preparation
Peel and finely chop the onion. Thinly slice the mushrooms. Season the meat with salt and pepper. Heat the oil in a frying pan and briefly sear the meat in batches. Transfer to a warmed platter and finish cooking in the oven for 15 minutes.
Melt the frying fat in the unwashed pan. Sauté the onion until translucent, add the mushrooms and cook briefly. Dust with flour and mix well. Deglaze with white wine and reduce by half. Add the veal stock and cream substitute and reduce the sauce to the desired consistency. Season with salt and pepper.
Return the meat to the sauce and heat through. Garnish with chopped parsley. Serve with freshly made rösti.
