Whole Chicken in Sesame-Soy Marinade

Ingredients
1 whole Swiss chicken/poularde (approx. 1.8 kg)
1 bunch coriander
4–5 tbsp light soy sauce
1 tbsp brown sugar
2 tbsp unhulled sesame seeds
1 pinch chilli flakes
200 g small onions
2 garlic cloves
1 Chinese cabbage
2 tbsp sunflower or rapeseed oil

1 lime
Preparation
Roughly chop the coriander and mix with the soy sauce, brown sugar, sesame seeds and chilli flakes. Place the chicken breast-side up in an ovenproof dish and brush with the marinade.
Peel and slice the onions and add them to the dish. Place in the centre of an oven preheated to 160°C, add 1.5 dl water and roast for 80–90 minutes. Baste occasionally with the cooking juices, adding a little water if necessary.
Meanwhile, peel and finely chop the garlic. Clean the Chinese cabbage and cut into fine strips. Heat the oil, fry the garlic until golden, add the cabbage and cook over gentle heat for 3–4 minutes, stirring constantly. Season with salt and keep warm.
Remove and carve the chicken. Serve with the braised onions and Chinese cabbage. Drizzle with lime juice if desired. Serve with rice.
